Nestled along Chaparral, in Corpus Christi’s ever-evolving downtown district, Lucy’s Snackbar has opened its doors. Right next door to the Texas Surf Museum, Lucy’s boasts a soothing color palette of neutrals and forest green, with unique vintage and industrial touches spread throughout. The spot, which is conveniently located for downtown goers and inhabitants, will serve as a new way for locals to get their mornings started or wind their evenings down.

Lucy’s offers coffee and a small, but eclectic breakfast menu, as well as experimental lunch and dinner menus, gratifying snacks, and beer and wine on tap. Food options include buckwheat waffles, breakfast and lunch grain bowls – featuring a variety of lean protein and fresh, roasted vegetables – and hearty snacks, such as biscuits with butter and prosciutto. And, there are always pastries on hand.

“It’s the perfect space for people to come by in the morning and grab what they need for the day, or come by in the evening and head back to their apartments with refreshments in hand,” says co-owner Jessica Gignac.

Of course, downtown residents and visitors alike are welcome to come in and hang out. Co-owners and siblings Jessica Gignac and Justin Ganain, who are also co-owners of Eleanor’s Coffee Bar + Market and The Goldfish, recently opened Lucy’s doors to bring another new space to Corpus Christi, and more specifically, the downtown area.

Using a load of reclaimed wood and various lost-and-found treasures, Jessica and Justin decorated the cozy space with a contemporary feel, catering to downtown residents. A few bistro tables will line the walkway just outside the front door, so customers can also sit outside and enjoy themselves.

Lucy’s Snackbar includes a retail space with packaged meals and snacks, as well as beer and wine to go. Included in the mix are various knickknacks for sale – mostly kitchen and small home goods.

“We just love the downtown area, and we love working with the people and businesses all around us,” Gignac says. “We heard over and over that the residents here needed a little snack bar where they could get a good breakfast or a good drink after work, and we are happy to provide that.”

As the number of new businesses in the downtown area continues to grow, Lucy’s Snackbar is a much welcomed addition. Whether you plan on making it your new go-to coffee spot or simply need a new corkscrew for your home, Lucy’s Snackbar is here and ready to serve.
