The hum of the oven, the aroma of house-made dough and Pam Chavez’s passion-filled spirit are the heart and soul of her exciting new venture. What was once Sam and Louie’s Pizzeria is now being elevated to Saucy Mama’s, a new locally driven and deeply personal pizza spot.
Navigating a difficult chapter in her life, Chavez bought a Sam and Louie’s franchise location. She soon found herself wanting to reinvent the menu, elevate the ingredients and go beyond the limitations of the franchise—realizing she was creating something more than simply pizza.
“I had to admit what was obvious: I was no longer building their brand. I was building mine,” Chavez said. “The menu, the sauces, the hospitality, the way people feel when they walk in. None of that came from a corporate playbook. It came from my lived experience and my belief that food can be both craveable and deeply supportive to the body. That is not something you can license; that is something you create.”
Chavez’s passion is obvious through her food. Coming from a background with 17 years in the military service, she was taught discipline, preparation and responsibility, a system that is being carried into what is now Saucy Mama’s.

And the restaurant would not exist if it weren’t for the mama herself. Struggles with infertility, multiple miscarriages and preparing meals for her sons as a single mom steered Chavez toward holistic nutrition. This journey solidified her belief that food possesses the power to be medicine, a source of comfort and a means of empowerment.
The restaurant maintains its commitment to top-tier hospitality, though the food itself has undergone exciting changes. The new menu is intentional, globally-inspired and nutritious. The updated offerings include new signature pizzas such as the Honeyfire, a sweet pie with a bit of a kick, and the Seoul Kiss, an homage to Chavez’s life in South Korea.
Reimagined sauces and crust exclusive to Saucy Mama’s round out the pizza updates. The new crust is crafted with lupin flour—a real, whole food—making it high in protein and a satisfying choice. Another new item, the Mediterranean Glow Bowl, is anti-inflammatory and packed with protein.
“Every sauce, every dough, every detail of Saucy Mama’s is a breadcrumb from my journey,” Chavez shared. “It’s a restaurant, yes, but it’s also proof that you can build something remarkable out of every place you’ve been and every storm you’ve walked through.”
