This past weekend was a successful event for a local pastrybrmaker. Veronica Guerra, the owner and creator of the Trendy Eats and VeganbrTreats hosted a brunch at Coffee Waves for the whole community to enjoy on Saturday.br

She provided a traditional look at breakfast, serving biscuitsbrand gravy or chicken and waffles. Allbrof her customers only had good things to say about the food and the array ofbrvenders present at the vegan brunch. She even had a raffle that awarded gifts, brfood items, and discount codes for some local shops, usually all in one ticket.

Veronica was surprised about the outcome, saying it over-metbrher expectations with the turnout. There were lines outside of Coffee Waves andbrher volunteer staff received plenty of praise for their hard work andbrdedication to the event. Some people were simply wanting to learn more aboutbrvegan foods and what kind of options are provided, showing true interest in thebrculinary practice. The community has proven to be a wonderful support system to her craft.

At the brunch, she served some of her most beloved items. HerbrCookie Monster Cupcake was a big hit per usual, and so was the Strawberry BasedbrCake and Fruity Pebbles Donuts. Veronica works from home currently, usuallybrmaking appearances at Joint Venture every other weekend for their market, butbrshe hopes to have her own store one day so customers can enjoy these treats at anybrtime. This vegan brunch was the first step in helping her make abrjump towards owning a storefront, kick starting her into growing the businessbrout of her home kitchen.

We can still find her desserts through many of the local pop-upbrevents or farmers markets, where she provides all her regular favorites andbrmore! Veronica has made anything from homemade ice cream and conchas, to breakfastbrmuffins, churros, and macarons so everyone can enjoy something vegan in thebrCoastal Bend.

In the future she plans to have more events like this veganbrbrunch, and maybe even make this specific one an annual occurrence every summer. There are even mentions of her participating in a holiday event, but she would lovebrsome feedback from the community about if she should make this a reality!
