Classic Pepperoni: Pepperoni and soppressata release admittedly delicious oils as they cook. Look for reds with some tannic oomph to balance the fat.

Bottle Rec: Sylvain Bock

Cheese: Chianti Classico does work like a charm but so do other midweight reds, like Vino Nobile di Montepulciano or Pinot Noir from Oregon.

Bottle Rec: Soleyana vin rouge Léger, 2022

Italian Sausage: Syrah will always complement the peppery taste of an Italian sausage pizza, but a Californian zinfandel will also do just as well.

Bottle Rec: Monster Party Petite Syrah, 2022

Veggie Lovers: My favorite for a veggie-topped pizza is a light-bodied and chillable red. The crisp zip of the wine is inarguably excellent with zucchini, broccoli, arugula and more. A light Italian red is always my choice.

Bottle Rec: Paolo Scavino nebbiolo, 2022

Margherita: Keep it simple for something so classic. Pair this similar to your cheese pizzas: anything midweight like a chianti or Pinot Noir.

Bottle Rec: Podere Magia Lambrusco, 2020

Dealer’s Choice – Arugula, Prosciutto and Ricotta: This is my absolute favorite kind of pizza. Gentle fruitiness and tingly bubbles of sparkling rosé work perfectly here. Never discount the power of bubbles; they make everything taste great.

Bottle Rec: Amaltea Loxarel, 2021
