Marty McPies at Home

We chatted with owner Martin Flores to get the inside scoop on making the perfect McPies-inspired pizza in your own kitchen.

Before 2021, Martin Flores, owner of Marty McPies hadn’t ever actually worked in a kitchen. He spent the majority of his career in the military and working in the railroad and refinery industries around the country. “Everywhere I went,” he said, “pizza was there.” Similar to seeing a familiar face in a crowd, eating a slice of pizza became a way for Flores to feel connected to the communities he resided in. “There are so many styles of pizza, but I didn’t have a favorite,” he said. “So I took my favorite parts of each pizza and created Marty McPies. I wanted to come home and make pizza for my people.”

The McPies fandom has grown as locals have seen Flores expand from food truck to brick-and-mortar. Now, he’s sharing the tried-and-true dough recipe for those wanting to start a pizza-making journey in their home kitchens.

INGREDIENTS

  • 1,000g 00 flour
  • 700g water
  • 30g salt
  • 30g olive oil
  • 3g yeast
  • For sauce: 1 can Stanislaus 7/11 tomatoes, 1 onion, fresh basil, red pepper flakes, garlic, EVOO, sugar, oregano and salt (all seasoning to taste)
  • Pizza toppings of your choice

DIRECTIONS

Step 1: Make the Dough

In a large bowl, mix 00 flour with water, salt, olive oil and yeast. Mix until a smooth dough forms.

Step 2: Proof the Dough

Cover the dough and refrigerate for  12-24 hours to proof slowly.

After proofing process, take the dough out and let it rise at room temperature  for 8-10 hours, until it doubles in size.

Once the dough has risen, divide it into 200-205g portions.

Roll each portion into a ball and let them rise again for 3 hours, until doubled in size.

Step 3: Prepare Your Pizza

Mix together one can of Stanislaus 7/11 tomatoes (or your preferred tomatoes), onions and spices to create your base sauce. 

Top your pizza with quality ingredients of your choice.

Step 4: Bake the Pizza

Preheat your oven to 750°-800°F. 

Bake the pizza for approximately 90 seconds, or until the crust is golden and crisp.

Hot Tip: For best results, you’ll want an oven that can reach the proper temperature. The Ooni and Forza pizza ovens are our personal favorites.
