Miss Arepa, a food truck that specializes in Venezuelan cuisine, has been a well-received food truck in the Coastal Bend since last October. The food truck is family-run and family-owned by the Parras.

Eva and Saul Parra, along with their two sons Daniel and Saul Jr., initiated this business because they wanted to bring the taste of Venezuelan food to Corpus Christi. The arepa, Miss Arepa’s signature dish, is a dish both Eva and Saul grew up eating.
Since both Eva and Saul are in the medical field, they also saw a need to make their grab-and-go food truck fare healthy. Eating healthy is rarely eating cheaply, and there are even less healthy options when one is on the run. But the Parras wanted to make a healthy food truck option accessible to the Coastal Bend. They manage this by catering to those who are low-fat or gluten-free, and are dedicated to using only fresh ingredients. The Parras also choose to grill their areas, instead of fry them!
“We wanted to melt our knowledge of health and nutrition into our love for food,” Eva said. They must have been successful in doing so, because residents have been melting into their delicious arepas ever since.
