The Coastal Bend never fails to express its vitality and vibrance. In the most trying of times, our community has proven to be steadfast and benevolent. Contributing to those positive forces we’ve seen is Chef Tony Nichols, executive chef for Corpus Christi Meal Prep and co-owners of The Exchange. Offering healthy cuisine options to nourish our body and nourish the hard-working first responders and local EMS staff that are on the front-lines battling COVID-19.
Wanting to help, he created Buy One, Give One, a campaign that would match every meal purchased with a meal for first responders. Based out of The Exchange Corpus Christi, Corpus Christi Meal Prep works with local farmers to bring the freshest ingredients and turn it into delicious meals for the community.
“We have never done a program like this before,” says Chef Tony. “This crisis is like nothing we’ve ever been a part of. With new challenges come new solutions. I found a creative solution to keep serving the community in the only way I know how, through food.”
In the past two weeks, Corpus Christi Meal Prep received over $1,600 in donations from around the country. Providing at least 350 meals to local first responders and medical staff. Chef Tony says they have produced around 500 meals to fire stations and employees at Spohn Hospital.
“We will continue donating meals until this crisis is over, and things return to some semblance of normal. Our commitment is to continue serving the community as long as there is a need to do so.”
