This past weekend was a successful event for a local pastry maker. Veronica Guerra, the owner and creator of the Trendy Eats and Vegan Treats hosted a brunch at Coffee Waves for the whole community to enjoy on Saturday.

She provided a traditional look at breakfast, serving biscuits and gravy or chicken and waffles. All of her customers only had good things to say about the food and the array of venders present at the vegan brunch. She even had a raffle that awarded gifts, food items, and discount codes for some local shops, usually all in one ticket.

Veronica was surprised about the outcome, saying it over-met her expectations with the turnout. There were lines outside of Coffee Waves and her volunteer staff received plenty of praise for their hard work and dedication to the event. Some people were simply wanting to learn more about vegan foods and what kind of options are provided, showing true interest in the culinary practice. The community has proven to be a wonderful support system to her craft.

At the brunch, she served some of her most beloved items. Her Cookie Monster Cupcake was a big hit per usual, and so was the Strawberry Based Cake and Fruity Pebbles Donuts. Veronica works from home currently, usually making appearances at Joint Venture every other weekend for their market, but she hopes to have her own store one day so customers can enjoy these treats at any time. This vegan brunch was the first step in helping her make a jump towards owning a storefront, kick starting her into growing the business out of her home kitchen.

We can still find her desserts through many of the local pop-up events or farmers markets, where she provides all her regular favorites and more! Veronica has made anything from homemade ice cream and conchas, to breakfast muffins, churros, and macarons so everyone can enjoy something vegan in the Coastal Bend.

In the future she plans to have more events like this vegan brunch, and maybe even make this specific one an annual occurrence every summer. There are even mentions of her participating in a holiday event, but she would love some feedback from the community about if she should make this a reality!

You can find her shop and information on Instagram or message her through Facebook to find out where she will be next!
